Banana Bread Blueberry Muffins

These Banana Bread Blueberry Muffins are the perfect snack to include in your meal prep. They are gluten free and totally freezer friendly so a great one to make ahead in a batch and take out to defrost as you need. If you want to include these in a lunchbox but can’t take nuts in you could swap the almond meal for oat flour (ground oats).

The Recipe

Ingredients

200g of ground almonds

2 large ripe bananas

3 eggs

1 tsp of baking powder

150g frozen berries

1 tsp of cinnamon

2 tbsp of maple syrup

Directions

Preheat the oven to 170C.

Blend all ingredients except the berries together, then stir in the berries.

Pop into lined or a greased muffin tray and bake for 25 minutes.
