Quinoa, Corn And Avocado Salad

This quinoa, corn and avocado salad is so simple and so delicious. The quinoa will keep you feeling fuller for longer so you won’t be reaching for the afternoon snack as quickly.. I love this as a side dish or I’ll whip up a big batch and keep it in my fridge for a quick meal when hunger calls.

The Recipe

Ingredients

100g quinoa cooked

1 can of black beans, rinsed

2 corn on the cobs, cooked

1 lime juiced

1 avocado cubed

1/2 cucumber cubed

100g of cherry tomatoes quartered

2 tbsp of fresh coriander

 

Dressing:

4 tbsp olive oil

2 tbsp apple cider vinegar

2 tsp dijon mustard

honey

salt

Directions

Cook the quinoa and corn as per the pack instructions.

In a large bowl add the quinoa, black beans, corn kernels, tomatoes, cucumber, avocado, lime juice with some salt and mix. 

Separately whisk the dressing ingredients together and pour over the salad.

Top with coriander and serve.
