Chimichurri Cauliflower Steaks

These Chimichurri Cauliflower Steaks are so delicious thanks to this super simple chimichurri sauce made from store cupboard essentials. If you have access to fresh herbs you could definitely add those in as well and you can also swap the cauliflower for squash, aubergine, peppers or whatever veg you love or have access too.

The Recipe

Ingredients

2 cauliflower

2 tbsp of olive oil

sea salt

chimichurri

120g of olive oil

2 tbsp of red wine vinegar

3 garlic cloves, minced

1 red chilli, finely chopped

1/2 tsp of dried oregano

1 tsp of sea salt

1/2 tsp of black pepper

Directions

Preheat the oven to 200C.

Cut the cauliflower into steaks

The other pieces can also be roasted along side.

Brush over the olive oil and season then place in the oven for 40 minutes.

Mix the dressing ingredients together.

Serve the steaks with the dressing on top.
