Mushroom Shakshuka

The sun might not be shining this morning but I’m still packing in the vitamin D thanks to this delicious mushroom shakshuka with vitamin D enriched mushrooms.
Vitamin D plays a key role in our immune function as well as maintaining healthy bones and teeth and even helping our hair grow.
Mushrooms naturally produce vitamin D following exposure to sunlight, which remains stable even when cooked. Research has found that eating just 8 mushrooms can give your RDI of vitamin D making them an amazing ingredient to add into your diet.

The Recipe

Ingredients

1 red onion, finely chopped

200g of vitamin D enriched mushrooms

1 tbsp of olive oil

1 tbsp of harissa paste

1 tsp of cumin paste

1 tsp of smoked paprika

2 garlic cloves, sliced

2 cans of chopped tomatoes

1 red pepper, sliced

4 eggs

100g of olives

20g of pine nuts

salt and pepper

a handful of coriander

Directions

Fry the onion for 5 minutes in the olive oil in a large pan.

Finely chop half the mushrooms and slice the rest. fry with the onion, add the garlic, harissa, smoked paprika, cumin and salt.

Add the pepper and fry for another 2 minutes then pour over the cans of chopped tomatoes and simmer for 10 mins.

Place 4 well in the pan and crack in an egg per well. Cook for 7-10 mins until the whites are cooked through.

Serve with pine nuts, olives, salt, pepper and coriander.
