Shakshuka

I love whipping up a Shakshuka for a weekend brunch and serving with some fresh sourdough bread to soak up those delicious yolks. It’s the perfect nourishing recipe I guarantee you’ll go back to time and time again. Complete the dish with a few warm spices and some fresh herbs. All in just one pan – easy on the washing up something we all like to hear.

The Recipe

Ingredients

1 onion, finely chopped

1 tbsp olive oil

1 red pepper sliced

3 garlic cloves sliced

1 tsp of cumin

1 tbsp of harissa paste

1 can of chopped tomatoes

salt and pepper

3 eggs

parsley

toast to serve

Directions

Start by frying the onion and garlic in olive oil for a few minutes.

Then add the pepper and fry for 5 minutes adding in the harissa and cumin and stir well.

After 5 minutes add the can of tomatoes and simmer for 10 mins with salt and pepper.

 Make small caves and add the 3 eggs and cook until the egg whites are cooked through.

 Top with parsley and dip some delicious sourdough in.
