Halloumi Traybake with Avo Lime Drizzle

I’m totally in love with the Halloumi Traybake with Avo Lime Drizzle. Just 5 minutes of chopping and a bit of time roasting away in the oven and you have a delicious dinner that packs loads of flavour. I love making this traybake and serving it with extra sauce and using it to fill wraps or just serving alongside some couscous for a satisfying and unbelievably simple meal.

The Recipe

Ingredients

1 pack of halloumi

1 beetroot, into small cubes

1 courgette, into inch cubes

150g of cherry tomatoes

150g of peppers, sliced

1 tbsp of olive oil

salt and pepper

 

avo dressing

1 avocado

Juice of 1 lime

1 tbsp of olive oil

2 tbsp of water

pinch of salt

pinch of chilli

Directions

Preheat to oven to 190c

Pop the veg and halloumi on a tray drizzle over olive oil, salt and pepper, shake and roast for 25-30 mins until golden and cooked through. 

To make the dressing blend the ingredients until smooth. drizzle on top and serve.
