Chickpea, Potato And Olive Traybake

I’m all about recipes that keep it simple but still deliver on flavour and this Chickpea, Potato and Olive Traybake ticks all the boxes with almost no hands on cooking time.

This is probably my favourite way to cook and I know you guys love recipes like this so expect many more traybakes from me in 2021.

I’ve kept this recipe vegan but you could add in some extra halloumi or fish fillets such as salmon or cod to make this meal even more filling and protein packed.

The Recipe

Ingredients

1 can of chickpeas

100g of potatoes, quartered

200g of cherry tomatoes

50g of olives

1 red onion thinly sliced

2 tbsp of olive oil

big pinch of salt

pepper

pinch chilli flakes

Directions

Preheat the oven to 200C.

Pop the potatoes and 1 tbsp of olive oil in a large tray, season with salt and roast for 25 minutes.

Add the rest of the ingredients to the tray cover with olive oil, salt, pepper and chilli flakes and roast for a further 20 minutes.
