Harissa Roasted Aubergine

I love to make sure I am eating plenty of colour and flavour. That’s why I have created a tasty aubergine recipe to showcase how accessible healthy eating can be, even when we don’t feel like it.

If you weren’t sure what to do with an aubergine before, you will now! Aubergine is harissa’s best friend, as it loves to soak up loads of flavour, and this pairing will have you going back for more. It is the perfect alternative to meat, with its texture, nutrients and flavour. This recipe is a great side to pair with rice dishes, meat skewers or anything with Middle Eastern flavour.

The Recipe

Ingredients

1 large aubergine

2 tbsp of olive oil

1 tbsp of harissa paste

100g of feta

2 tbsp of fresh coriander leaves

Directions

Start by slicing the aubergine into circles.

Separately, in a bowl, make the dressing with the olive oil and harissa.

Add the sliced aubergine and coat until fully covered.

Roast in the oven at 190C for 15 mins until golden and slightly crispy.

Top with feta and coriander leaves, then serve up.
