Roasted Beetroot Salad with yoghurt & tahini

This might just be one of my favourite winter recipes!

Did you know? Beetroots are a great source of Vitamin B9 (Folate) which is an important vitamin in red blood cell formation and for healthy cell growth and function.

I’m always looking for excited ways to enjoy beetroot as a part of my lifestyle, and this recipe here hits the spot! I hope you love this.

The Recipe

Ingredients

1 bunch of beetroot
1 tbsp of olive or avocado oil
2 tbsp of parsley

tahini yogurt
3 tbsp of tahini
200g of yogurt
1 lemon
1 garlic cloves
salt and pepper

Directions

Start by preheating the oven to 200c.

Next, wash the beetroot and chop off the top then cut into quarters and pop on a roasting tray cover in the oil and salt and pepper and roast for 45 mins.

Whilst this is roasting, mix the tahini, yogurt, juice of the lemon, crushed garlic clove with salt and pepper and smear onto a plate.

Top this mix with the cooked beetroot and herbs and dig in.
