Gremolata Smashed Potatoes

Sleigh it isn’t so! These might just be my best roasted potatoes yet. 😋

Crispy and packed FULL of flavour, these are an absolute festive season must-make!

You could serve these as a side to a main course or enjoy cooked with a salad.

The Recipe

Ingredients

Potatoes -
500g of potatoes
3 tbsp of olive oil
salt and pepper

Gremolata -
1 lemon
4 tbsp of chopped fresh parsley
1 garlic, crushed
salt and pepper
1 tbsp of olive oil

Directions

Start by preheating the oven to 200C and boiling the potatoes for 25 mins.

Place the boiled potatoes on a large baking tray and use the bottom of a glass to crush the potatoes down slighlt then drizzle iwth 3 tbsp of oil and season well with salt and pepper. Roast for 30 mins until golden and crispy.

While they are roasting finely chop the parsley, add in the zest of half the lemon and the rushed garlic, salt, pepper and 1 tbsp of olive oil.

Pop this gremolata on the potatoes to serve.
