Griddled Peaches with Vegan No Churn Cinnamon Ice Cream

Warm Griddled Peaches with Vegan No Churn Cinnamon Ice Cream has got to be one of my favourite dessert combinations ever. The best thing about this recipe is that the ice cream uses only 4 ingredients and you don’t need an ice cream maker or any fancy equipment. If cinnamon isn’t your thing simply swap out for your favourite ice cream flavourings whether that’s adding cacao for a delicious chocolate version or going for a simple luxurious vanilla, I can’t wait to see your versions of this simple yet seriously satisfying dessert.

The Recipe

Ingredients

For the ice cream
400ml Coconut Cream (place in the fridge for a day before making the ice cream)
X Maple Syrup (plus extra to serve)
1 tsp Cinnamon
1tsp Vanilla Paste

2 Peaches
1 tsp Coconut Oil

Directions

To make the ice cream, add your coconut cream to a bowl and whisk until fluffy (I’d recommend using an electric whisk)

add in the flavourings and whisk again

pour into a tin, a loaf tin works perfectly and spread evenly

place in the freezer for at least a couple of hours (you can leave it in overnight)

when you are ready to serve take the ice cream out of the freezer 15 minutes before for easy scooping

While you are waiting for your ice cream to melt, prepare the peaches

half your peache

melt coconut oil in a griddle pan

place your halved peaches flesh side down and cook for 5 minutes until grill lines appear

serve together with the ice cream and an optional drizzle of maple syrup
