Mocha Cookies

I don’t know about you, but when it comes to flavours I’m big on balance - so when it comes to these gooey cookies, they hit the perfect spot. The contrast of the sweet from the cookie and the bitterness from the coffee hits the spot every time!

I’ve been loving enjoying these whilst curled up in front of my favourite Christmas film, or, served on a plate for when guests arrive.

Just SO good!

The Recipe

Ingredients

60 g cocoa powder
180g coconut sugar
120g gf four
1/2 teaspoon baking powder
1 teaspoon instant coffee powder
1/2 teaspoon salt
100g coconut oil or butter, melted
1 egg
50g dark chocolate, broken into pieces

Directions

Start by preheating the oven to 180C. Next, line a baking tray with baking paper. 
After, whisk the egg, and add in the melted & cooled oil/butter and continue whisking well before adding in the cocoa powder, sugar, flour, baking powder, coffee and salt.
Roll into 2 tbsp balls then pop onto the baking tray.
Add in some dark chocolate to the middle, and repeat for the rest of the mixture, making sure they are evenly spread out.
Bake for 10 mins, then leave to cool before digging in.
