Berry Yoghurt Pancakes

Pancake day is just around the corner so of course, what could be better than a fresh stack of warm, berry pancakes drizzled with maple syrup and a dollop of deliciously creamy yoghurt. I had to treat you all to these fluffy pancakes to get us in the mood for tomorrow.

The Recipe

Ingredients

Pancakes:

1 egg

100g of oats

2 tbsp of milk

1 tsp of cinnamon

 

Toppings:

150g yogurt

100g Berries

1 tbsp Maple syrup

Directions

Add the oats into a blender and blitz for a minute until it turns into flour.

In a bowl whisk the egg and then add the milk and then stir in the oats and cinnamon until you get a creamy texture.

Heat a frying pan to medium heat, add some butter and fry 2 tbsp of the mixture for a few minutes on each side until golden brown. Repeat with the rest of the mixture.

Top the pancakes with yoghurt, berries and maple syrup.
