Tofu Lunch Bowl

This Tofu Lunch Bowl is my go to quick and easy weekday lunch, eating the rainbow is one of the best things you can do for your health and this plate couldn’t pack in much more colour.

The Recipe

Ingredients

1 pack of tofu, cubed

1 tbsp of teriyaki sauce

1 tbsp of sesame oil

1 tbsp of maple

1/2 red pepper, sliced

1 sweet potato

1tbsp of olive oil

1 handful of green

1/4 cucumber

4 tbsp of hummus

4 tbsp of sprouts

Directions

Preheat the oven to 200c, cut up the sweet potato into cubes and roast for 40 minutes.

Mix the tofu, sesame, teriyaki and maple together. Heat a pan and fry for 10 mins until golden. mix together in a bowl.

Drizzle the teriyaki dressing on top
