Vegetable Fritters

I don’t know about you, but after spending a busy festive period spending what felt like hours in the kitchen, January is a time of year I like to keep things quick, simple and oh so delicious.

These vegetable fritters are the perfect addition to your weekly menu and great for when you have some about-to-go-bad root veg kicking around at the bottom of your fridge.

I hope you love these as much as I do!

Fritter:
1 egg
1 grated parsnip
1 grated carrot
3 tbsp of chickpea flour
1 tsp of turmeric
1 tsp cumin
1 spring onion chopped
Salt and pepper
Zest of half a lemon

To Serve:
Olive oil
Red chilli
Yogurt
50g rocket

Directions:
Whisk the egg in a bowl add the grated veg, spring onion, flour, spices and salt and pepper. Mix well.
Heat a pan to a medium heat with some oil and fry 3-4 tbsp of the mixture a few mins each side. Repeat with the rest of the mixture and we’ve with rocket, yogurt and fresh chilli.
