Harissa Salmon Traybake

For me weekday meals are all about simplicity. It doesn’t get much simpler than this Harissa Salmon Traybake I can just throw in the oven with minimal prep and get on with whatever else is on my to do list. I’m loading up on omega 3s with the salmon but if you are plant based you could always leave the salmon out and up the protein with a double serving of the chickpeas.

The Recipe

Ingredients

4 salmon fillets
2 tsp harissa
1 red onion
1 red pepper
1 yellow pepper
200g new potatoes
1 Tin chickpeas
A jar of Green olives
2 tbsp Pomegranate seeds
1 Lemon
A handful of mint leaves

Directions

Preheat the oven to 180C
Cut the vegetables into quarters and toss in olive oil and season with salt and pepper
Roast for 30 minutes
Take the tray out and place the salmon on top, brush with harissa and place the whole tray back in the oven for 10 minutes
To serve, sprinkle over mint leaves, pomegranate seeds and lemon juice or slices and serve
