Pomegranate Molasses Traybake

If you know me, you’ll know I’m a big lover of a traybake. I find them to be a simple yet effective way to pack in lots of nutrients with minimal effort… or washing up!

I’ve listed the vegetables I chose to use in the recipe, but feel free to get creative! This is the perfect opportunity to use up any ‘almost-bad’ veg you have sat at the back of your fridge.

A delicious dressing and some crunchy, toasted nuts are the perfect way to spruce up your basic traybake. This pomegranate molasses dressing is the perfect ratio of tangy-sweet and can be paired with veg, couscous, beans, or salads.

The Recipe:

Ingredients

Traybake-

1 sweet potato cubed
50g kale
1 head of broccoli
200g cherry tomatoes
50g pecans

Pomegranate molasses dressing-

3 tbsp of pomegranate molasses
2 tbsp of sherry or red wine vinegar
1 tbsp of dijon
1 tbsp of honey or maple
4 tbsp of olive oil 
salt and pepper

Directions

Preheat the oven to 200c.
Cube the sweet potato and add to the tray, drizzle in oil and bake for 20 mins. Chop up the brocolli into florets and sliced up the stalks into cubes, then add the tomatoes and brocolli to the roasting tray. Drizzle over the olive oil, season and roast for another 20-25 mins.

Pop all of the dressing ingredients into a jar and shake until fully mixed. Masssage the kale in 2 tbsp of the dressing and pop on a plate add the tray baked veg and top with more dressing and pecans.
