Oats with Stewed Apple & Toasted Pumpkin Seeds

This warm breakfast bowl is great for those colder Autumn/ Winter mornings.

The Recipe

Ingredients

4 Apples

4 Cloves

1 tbsp Cinnamon

1/2 tsp Vanilla Extract

Zest and Juice of Orange

80g Oats

340ml Rice Milk

1tbsp Flax seeds

1tsp ground cinnamon

1/2 tsp Vanilla extract

25g Pumpkin seeds

1 tbsp Tahini

Directions

I usually prep this the night before to make life easy. First, core and roughly chop the apples, keeping the skins on. Throw them in a saucepan with the cloves, cinnamon, vanilla extract, orange juice and zest. Heat to a simmer and stew for 20 minutes, stirring occasionally, until the apples are nice and soft. Refrigerate. In a bowl, mix the oats, rice milk, flax seeds, cinnamon and vanilla extract. Cover and refrigerate overnight. In the morning, toast the pumpkin seeds in a dry pan for 1 minute. While the pumpkin seeds cool, heat up your stewed apple and oats. Serve topped with your toasted seeds.
