Harissa Yogurt Aubergine Bowl with Couscous and Pomegranates – Ooo la la!!

Such a delicious lunch or weeknight meal, which takes no longer than 45 minutes. It’s so fresh and I love that you can use the harissa yogurt on just about anything, so be sure to make extra!

The Recipe

Ingredients

1 aubergine
1 tbsp is sesame oil
1/2 cucumber
200g of cherry tomatoes
75g of couscous
1 pomegranate

Yogurt dressing
100g natural yogurt or coconut
1/2 lemon juiced
2 tbsp of harissa paste
Salt

Directions

Preheat the oven to 200C.

Slice in half and criss-cross the aubergine. Rub half the harissa and the sesame oil on the aubergine. Roast for 40 mins.

Mix the yogurt dressing together.

Cook the couscous as per pack instructions.

Remove the seeds from the pomegranate.

Slice the cucumber into chunks and cut the tomatoes in half. Mix together.

Mix the couscous with the pomegranate and salt. Serve with salad. Top the aubergine with the yogurt and serve together with some fresh coriander.
