Apple & Raspberry Crumble

Colder days means time for comforting and warming deserts and this apple & raspberry crumble is exactly that. It’s so simple to make, packed full of texture and full of nutrients from all the fruit and low in sugar. This recipe is also great if you have any leftovers for breakfast the next day with a dollop of yoghurt. For me, it is the perfect post-dinner treat with a nice cup of herbal tea.

Ingredients

2 apples, sliced
1 punnet of raspberries or blackberries
1 tbsp of maple or honey
150ml of water

Crumble topping:
250g of oats
100g of oat flour
100ml melted coconut oil
1 tsp of cinnamon
1 tbsp of maple or honey


Directions

Preheat the oven to 180 C. 

Chop up the apple and let simmer in water in a deep pan. Add maple syrup and leave for 15 minutes.

While the apples are cooking, mix the crumble ingredients in a bowl until combined.

Once the apple is cooked through, stir in the berries and pour them into the bottom of a baking dish, top the fruit with the crumble and bake for 30 minutes. 

Serve up with yoghurt or ice cream.
